Mother’s Day Chocolate Cake
2 cup unbleached sifted flour
1/2 cup cocoa – baking
2 1/4 tbsp baking Soda
3/4 tsp salt
3/4 cup vegetable shortening
1/3 cup sugar
1 1/2 cup dark corn syrup
3 large seprated eggs
1 1/2 tsp vanilla extract
1 cup cooled coffee

How To Make Mother’s Day Chocolate Cake

  • Preheat oven to 350 degrees F.
  • Sift the flour, cocoa, baking soda and salt together. Set them aside.
  • Cream the shortening and sugar in a mixing bowl until it become light and fluffy. Now, blend in the corn syrup and egg yolks & beat in vanilla.
  • After that add dry ingredients alternately with coffee to creamed mixture. Beat it well after each addition.
  • Beat egg whites in another bowl and fold it into cake batter.
  • Your cake mixture is ready so, pour it into a greased 13 x 9 x 2-inch baking pan.
  • Bake it for about 45 minutes and make sure to do cake tests.

Strawberry Yogurt Mousse Cake
1 x 400g packet digestive biscuits
200g unsalted butter, melted
500g hulled strawberries
2tbsp lemon juice
75g caster sugar
4 leaves gelatine, softened in cold water or use 4 level tsp powdered
250ml Greek yogurt
1 x 284ml pot double cream
How to make strawberry yogurt mousse cake: “

  • To make this cake crush the biscuits in a blender and add the melted butter. Mix well. Now, press this biscuit mixture into the base of the springform tin.
  • Blend strawberries and lemon juice in a blender and make it purée until smooth. Heat the purée and sugar gently in a saucepan until the sugar dissolve and remove the pan from the heat.
  • Now squeeze the excess water from the soaked gelatine leaves. Mix them to the strawberry mixture & stir well until dissolved, then cool.
  • When gelatin – strawberry mixture get cold, whisk in the yogurt.
  • Whip the cream until it become thick and fold it into the strawberry mixture. Pour this mixture over the biscuit base and chill in the fridge for overnight until set.
  • Serve this yummy cake with with a spoonful of yogurt and strawberries

Mother’s Day Brandy Cake
” 4 Eggs, separated
” 1/2 cup Sugar – divided in half
” 1 cup sifted flour
” 1 ts baking powder
” 1/4 ts cinnamon
” 1 pinch salt
” 5 ts melted butter
” 1/2 cup almonds, chopped

” Brandy Sauce:
” 2 cup water
” 1 3/4 cup Sugar
” 1 tbsp light corn syrup
” 3/4 cup brandy

  • Preheat oven to 375F.
  • Start with beating egg whites with one-half of the sugar until stiff peaks form.
  • Now beat egg yolks lightly and add to the other half of the sugar. Mix yolks and egg whites.
  • Start combining all dry ingredients and fold them into the eggs. Add the melted butter and nuts.
  • Grease a 2 quart baking dish and set aside. Pour batter into the baking dish and bake for about 1/2 hour.
  • For Brandy sauce boil water, sugar, and corn syrup until it forms a ball at 236 F and add the brandy to it.
  • When cake is still warm, use a thin skewer to make small holes all over the cake. Now, pour this brandy sauce evenly over the cake.
